Ingredients:
- 4 sirloin steaks, approximately 1 inch thick
- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 1 tablespoon freshly ground black pepper
- 2 cloves garlic, minced
- 2 sprigs of fresh rosemary, minced
Instructions:
- Remove the steaks from the refrigerator and let them come to room temperature for at least 30 minutes before cooking.
- Preheat the oven to 400°F (200°C).
- Rub the steaks with the olive oil and season them generously with kosher salt and freshly ground black pepper.
- Heat a cast iron skillet over high heat until it's very hot.
- Add the steaks to the skillet and cook for 2-3 minutes on each side, until they are well browned.
- Add the minced garlic and rosemary to the skillet and cook for another minute, until fragrant.
- Transfer the skillet to the preheated oven and cook the steaks for an additional 4-6 minutes, depending on how well-done you like your steak.
- Remove the skillet from the oven and let the steaks rest for 5 minutes before serving.
